Origin
Our tencha is grown in the shaded fields of Uji, near Kyoto—one of Japan’s most respected matcha-growing regions. Each spring, young leaves are carefully harvested, steamed, dried and slowly stone-milled into a fine, vibrant green powder.
Shade-growing encourages the naturally sweet, rounded flavour and rich colour associated with high-quality ceremonial matcha. It is a slower process from the beginning, and one worth preserving.
The ritual
A simple ritual for an unhurried morning.
Warm water, just below boiling. A bamboo whisk, moved lightly until the matcha becomes smooth and softly foamed. It is a simple process—one that asks you to be present for it.
